I wanted to share with you all some crock pot successes I've had this week. My cooking skills are right up there with my crafty creations....so not high on the list. But move over Betty Crocker because I'm two for two with my crock pot creations. Allow me to share my secret recipes...aka from the "Fix-It and Forget-It Cookbook" and Jana.
Nancy's Vegetable Beef Soup
(I chose this one from the many other beef soups b/c Nancy's from Manhattan, KS...like her)
2 lb roast cut into bite-sized pieces (I used a microwavable Hormel pot roast...good)
15 oz. can corn
15 oz. can green beans
1 lb bag frozen peas
40 oz. can stewed tomatoes
5 beef bouillon cubes
2 tsp. salt
Combine all ingredients in crock pot. Do not drain vegetables. Add water to near top. Cover and cook on Low 8 hrs.
**I used a bag of frozen vegetable medly instead of all the canned veggies
Cream Cheese Chicken Chili
1 can black beans
1 can corn, undrained
1 can rotel, undrained
1 package ranch dressing mix
1 tsp cumin
1 Tbsp chili powder
1 tsp onion powder
1 8 oz. package cream cheese
2 chicken breasts
Drain & rinse black beans. Place raw chicken at bottom of pot, pour corn, rotel, and black beans over. Top with seasonings and ranch mix. Stir together. Place cream cheese on top. Cover and cook on low 6-8 hours. Stir cream cheese into chili. Use fork to shred chicken.
Amongst my successes there's still a failure....the camera charger has not turned up yet. Don't worry, I'm getting a new one and will have pics among all my novels again soon.
